This is very, very thorough. Allocate a good amount of time to take in all the useful info in this book. I really appreciated the info on vegan athletes as well as the section on chronic pain. Those who are overweight will delight in a chapter dedicated to the challenges of keeping weight off, and the benefits of even minor weight loss.
I understand that free glutamates (MSG) is naturally occurring in some foods, so I'm not convinced of her arguments on this topic (1 page) for people with migraines and fibro, but I tend to avoid it being added to my foods, except when eating at vegan Asian restaurants (not that there are many of those around where I live!).
Well referenced book, with resources for further information and recipes near the end. This is very, very thorough. Allocate a good amount of time to take in all the useful info in this book. The information in here is golden. How oncologists pressure patients to undergo procedures that have no proven benefit. How pharmaceutical companies have bought government.
How and why nutritional research is underfunded. How pharmaceutical companies don't actually pay for the research they do! It is really mind-boggling!The information in here is golden. If you are considering a healthier diet, this is a fantastic book, written by a registered dietician. It addresses weight loss, chronic disease prevention (including cancer), supplements, genetic modification of foods, and tips for athletes on plant-based diets. Most recipes are do-able and are not too much of a stretch for the average person's cooking ability or palate. I will be testing out the baked lentils and rice casserole which takes 5 minutes to prepare (chopping onion, opening cans, and added broth and herbs). Recipe indicates 90 minutes cooking time in a deep dish (stir once every half hour), and I am fairly confident I can reduce this to 1 hour in a shallower casserole. She says: "Rustic and hearty, this simple baked dish will be a regular staple in your home." and I'm guessing she's right. She also discusses whether there is merit to the raw food diet some gravitate towards and the dessert recipes look pretty quick and easy to do if you have a food processor. I'm not sure I would start out with 4 cups of greens in your green smoothie, unless you are already used to green smoothies. If you are considering a healthier diet, this is a fantastic book, written by a registered dietician. While I think the success rate has more to do with abstaining from meat and dairy (based on other documentaries such as Chow Down and Forks Over Knives), it is really impressive to see people fight the diet, either stick with it and get phenomenal results or quit. This will be of interest to Type I and Type II diabetics, as well as those wanting to prevent Type II.While I think the success rate has more to do with abstaining from meat and dairy (based on other documentaries such as Chow Down and Forks Over Knives), it is really impressive to see people fight the diet, either stick with it and get phenomenal…

I think the technique for kneading the bread was precise and to me demonstrates artisan technique and skill. I found the teacher to be gentle in his feedback and not too hung-up about anything. I really enjoyed this film because it is such a different way of looking at cooking and life. People weren't rushing in the kitchen, the head chef wasn't screaming at people, unlike the hollywood stuff we often see. However, I must say, I have had a good week since watching the film, when there is a quote from the zen master who says we should think about joy. What creates joy? My lesson, my words: when you cook, make it joyful; when you clean, make it joyful, when you work, make it joyful.I think the technique for kneading the bread was precise and to me demonstrates artisan technique and skill.
