I came across this book while looking for recipes for a potluck. After picking this up and making the derby pie, I can conclude that it is a sure winner. The recipes are amazing and the custard pies are to die for! The crust recipe is pretty basic, just remember too much kneading will remove all the butter marbling from your crusts.

LOVE the intro, complete with photos detailing all the steps for making the pie crust! To be perfectly honest, I've only made one of the pies in this book, but that one pie has yet to fail me. Not to mention their pie crust recipe, which has likewise received stellar reviews, even from people who claim not to like pie crust. It's definitely worth a try!

Repeat flavoring ingredients in all the pies...surely there is more room for creativity. Or, maybe they know something I don't - they do have a cookbook and a bakery after all.

Twenty-something sisters Emily and Melissa Elsen know their pie. They hail from small-town North Dakota, where their family owned a restaurant in which the girls learned to bake at their grandmother's elbow. Their Four & Twenty Blackbirds Pie Shop in Brooklyn, opened in 2010, has quickly risen to national prominence because the girls have combined their real-world know-how about pie making with cutting-edge culinary trends. This collection of exciting, flawless, and thoroughly vetted recipes quite possibly form the most exciting pie cookbook on the current market.

The Elsens make their pies seasonally and therefore arrange the recipes in this fashion.
